Spice Espresso Overnight Oats is a great gluten-free, vegan, easy breakfast recipe that uses healthy, wholesome ingredients, a shot of espresso and perfectly spiced for Fall with pumpkin pie spice.

What you need

ground cinnamon

hazelnut

coconut milk

cup oat milk

espresso

pinch salt

tbsp pumpkin puree

tbsp vanilla extract

tbsp pumpkin pie spice

tbsp coconut sugar

tbsp chia seed

cup rolled oats
Instructions
Dose the one cup Filter Basket in the Portafilter with your favorite coffee grinds. Evenly tamp (press) the grinds to indicated level, wipe the edges to clean any excess grinds and insert into the Group Head of your Compact Manual Espresso Machine. Next, prepare the oats. Add the rolled oats, chia seeds, coconut sugar, pumpkin pie spice, vanilla, pumpkin puree, and salt in a glass container with a lid. If the container fits into the espresso machine, you can just pour the espresso shot right over the oats, but if not, just use an espresso cup/glass. Next, pull/pour one shot (1 cup) of espresso over the oats. Pour 1/2 of the plant milk over the oats, stir, then pour in the other half and stir until everything is well combined. Cover and chill in the fridge for 4 hours to overnight and enjoy the next morning! Feel free to add your favorite toppings such as coconut cream, chopped nuts, cinnamon, chia seeds, and maybe a drizzle of maple syrup.View original recipe
